Instant Pot Mac and Cheese cooks a pound of elbow macaroni in the liquid that becomes the sauce, so there is no draining and no second pot. The pasta pressure cooks for 4 minutes in 4 cups of broth with butter, then evaporated milk, mustard and a pound of cheese stir in off the heat.
Plan on 5 minutes of work and about 25 minutes overall, most of it the pot coming to pressure. One dish: the inner pot. The finish cue is a sauce that coats a spoon and pulls into strands when you lift a few elbows. Never add the cheese on Sauté; it goes grainy.
Why this works
- Four cups of liquid to a pound of pasta is the ratio that leaves almost nothing to drain. The starch stays in the pot and thickens the sauce.
- Four minutes at high pressure with a quick release gives elbows with a little bite. Six minutes, which some recipes use, lands softer; the card chooses the shorter time because the pasta keeps cooking in the hot sauce.
- Evaporated milk instead of regular milk: it has less water, so the sauce stays creamy without flour. Shredding the cheese yourself matters, because bagged shreds carry starch that makes the sauce gritty.
Ingredients
- 1 pound elbow macaroni (454 g)
- 4 cups low-sodium chicken broth (960 g)
- 3 tablespoons unsalted butter
- 1 teaspoon kosher salt
- 1 can (12 ounces) evaporated milk (354 g)
- 1 teaspoon ground mustard
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon ground black pepper
- 12 ounces sharp cheddar cheese (340 g), shredded from the block
- 4 ounces Monterey Jack cheese (113 g), shredded from the block
Ingredient notes
- Elbow macaroni: 1 pound of regular elbows. Shells and cavatappi work at the same time; thin shapes like angel hair do not belong in a pressure cooker.
- Broth: 4 cups of low-sodium chicken broth gives more flavor than water. Water works with an extra 1/2 teaspoon of salt.
- Butter: 3 tablespoons go in with the pasta. It keeps the foam down during the release and rounds out the sauce.
- Evaporated milk: one 12-ounce can, shaken. Do not swap sweetened condensed milk, which is a different product.
- Cheese: 12 ounces sharp cheddar plus 4 ounces Monterey Jack, both shredded from the block. The jack melts smoother; the cheddar brings the flavor.
- Ground mustard and a pinch of cayenne: you will not taste either as itself. They sharpen the cheese.
How to make Instant Pot Mac and Cheese
Load the pot
Put the dry macaroni, the broth, the butter and the salt in the inner pot and stir once so no pasta sits in a dry clump on the bottom. Make sure the liquid covers the pasta; press down any elbows riding on top or sitting apart from the liquid. Nothing needs to be arranged beyond that.

Pressure cook 4 minutes
Lock the lid and set the valve to Sealing. Cook on Manual or Pressure Cook, High, for 4 minutes. The pot takes about 8 to 10 minutes to reach pressure first; that is normal for 4 cups of cold liquid. Shred the cheese while you wait.
Quick release, carefully
When the timer ends, turn the valve to Venting in short bursts rather than all at once. Starchy liquid can spit through the valve if it goes to full open; a folded towel laid loosely over the valve catches any foam. Open the lid when the pin drops. There should be a little liquid left in the bottom; that is the sauce base.
Stir in the milk and cheese
Turn the pot off. Stir in the evaporated milk, ground mustard, cayenne and pepper. Add the cheese a handful at a time, stirring after each, until it melts into a smooth sauce. The residual heat is enough; the Sauté setting is too hot and breaks the sauce.
Rest 5 minutes and serve
Let the mac and cheese sit for 5 minutes with the lid off. The sauce goes from loose to clinging in that time. Stir once more, taste for salt, and serve straight from the pot. If it tightens before everyone is served, a splash of milk brings it back.

Instructions
- Load. Put the dry macaroni, broth, butter and salt in the inner pot. Stir once so no pasta sits in a dry clump, and push any floating elbows under the liquid. The liquid should just cover the pasta.
- Pressure cook. Lock the lid, set the valve to Sealing, and cook on Manual or Pressure Cook, High, for 4 minutes. The pot needs about 8 to 10 minutes to reach pressure with 4 cups of cold liquid. Shred both cheeses from the block while you wait.
- Release. When the timer ends, turn the valve to Venting in short bursts to control the foam, with a folded towel laid loosely over it. Open the lid once the pin drops. A little liquid should remain in the bottom; that is the sauce base.
- Finish. Turn the pot off. Stir in the evaporated milk, ground mustard, cayenne and pepper, then add the cheese a handful at a time, stirring after each, until the sauce is smooth. Do not use Sauté for this step; the residual heat is enough.
- Rest. Let it stand 5 minutes with the lid off so the sauce thickens, stir once more, taste for salt and serve from the pot. Loosen with a splash of milk if it tightens before everyone is served.
Notes
- Cook time includes about 10 minutes coming to pressure, 4 minutes cooking, the release and the 5-minute rest.
- Six minutes at pressure gives softer pasta, which some cooks prefer; the sauce keeps cooking it either way.
- An 8-quart pot can take a double batch at the same time; a 6-quart cannot.
- instant pot mac and cheese
- pressure cooker macaroni and cheese
- one pot mac and cheese
Tips
- Shred the cheese from a block. Pre-shredded cheese is coated with starch and leaves a grainy sauce.
- Cheese goes in with the heat off. Hot pot, cold cheese, slow stirring: that order keeps it smooth.
- A burst release, not a full-open one. Pasta water foams; venting in short pulses keeps the valve clean.
- The sauce thickens as it sits. Serve it a little looser than you want it on the plate.
- Taste before salting. Broth and cheese both carry salt; the card's 1 teaspoon is a starting point.
Substitution
Swap 4 ounces of the cheddar for smoked Gouda or Gruyère for a deeper flavor. For a loaded version, top each bowl with crumbled cooked bacon and sliced scallions. Stir in 1 cup of frozen peas with the milk; the residual heat warms them in the 5-minute rest. For a crisp top, spoon the mac and cheese into a baking dish, scatter 1/2 cup panko tossed with 1 tablespoon melted butter over it, and broil for 2 to 3 minutes, which adds one dish.
Serving and storage
Serve in bowls as a main with a green salad, or as a side for the pulled pork on this site. The card makes 8 side-size or 6 main-size servings from 1 pound of pasta. Keep the pot on Keep Warm with the lid on between servings; the sauce holds for about 20 minutes before it starts to tighten.
Storage
Refrigerate leftovers in a covered container for up to 4 days. Reheat a bowl in the microwave for 60 to 90 seconds with a tablespoon of milk stirred in, pausing once to stir; the sauce goes back to creamy. Freezing is possible for up to 2 months in portions, but the texture softens and the sauce can separate, so refrigerating is the better plan. Reheat frozen portions from thawed, never from frozen.

Questions people ask
Why is my Instant Pot mac and cheese grainy?
Either the cheese went in while the pot was on Sauté, or it was pre-shredded. Turn the pot off before the cheese, add it in handfuls, and shred from a block.
Can I double the recipe in a 6-quart Instant Pot?
Not comfortably. Two pounds of pasta and 8 cups of liquid pass the pot's max-fill line for foaming foods. Make two batches, or use an 8-quart pot with the same 4-minute time.

Before you go
Instant Pot Mac and Cheese is the one-pot version that earns the name: the pasta water is the sauce, the cheese goes in off the heat, and the inner pot is the only thing to wash. Five minutes of work, 25 minutes total, and it holds on Keep Warm while the rest of dinner catches up.
